Here is a recipe for basic pasta dough. Yeah, I know life is so convenient now why would we ever make it from scratch. Well some people still do. Try it, you may enjoy it.
Basic Pasta Dough
4 Cups white bread flour
4 eggs, lightly beaten
Olive Oil or water if needed
Put flour into a large mixing bowl, and make a well in the center. Add the beaten eggs, then bring mixture together. First use a fork then fingers. If the dough is too dry add a drop of olive oil or water. Gather the dough and make a ball, knead with the palm of your hand until dough is smooth, shiny and no longer sticky. Cover dough in plastic wrap and leave in a cool place for 30 minutes. If you using a pasta machine then no need to sit for 30 minutes you can use right away. Allowing the dough to sit will help prevent it from springing back out of shape when rolling it out.
Cooking the Perfect Pasta
- Always cook pasta in a large pot of boiling water. This prevent it from sticking together
- Do not overcook pasta. It should be Al Dente. Fresh Pasta only takes about a minute or two to cook
- Rinse cooked pasta in cold water. It helps rinse off extra starch.
- Do not shake pasta vigorously; give colander a brief shake and let pasta drain.
